This dish looks really flavorful and lovely. I like your suggestions for alternative fish, depending on what is at hand. I wonder, too, about alternate fruit? Pineapple is very tasty but does not agree with me at all (allergy--I get hives.) What about grilled peaches or perhaps apricots? That might taste good.

This sounds great! I recently got some Himalayan pink salt and organic peppercorns from Sustainable Sourcing secure.sustainablesourcing.com and I'll have to try them out in this recipe. And everyone at my house loves salmon AND pineapple!!! 🙂 Thanks for sharing!

This is perfect, I have a ton of mint in the front yard. I'm trying to find as many ways to use it that I can.

This recipe was so simple and so delicious!! I even skipped the mint, cilantro and jalapeno in the salsa and added mango and red pepper instead. I also topped the salmon with some of the salsa as it cooked. So it roasted the salsa with the salmon. Delish!! My husband said to add this recipe to the rotation:)
