This potato and chicken salad is very easy to make and perfect for lunch, dinner or to entertain.

This potato and chicken salad recipe is a take on my Ensalada Rusa recipe, which translates as Russian Salad. If you are not familiar with this salad, it’s a classic potato salad served throughout Latin America, usually made with potatoes, carrots, peas, onions and mayonnaise, although there are many variations.
I added diced apples and cooked shredded chicken to my traditional recipe and the result was fantastic! I really Iike the combination of textures and flavors of this potato and chicken salad, which can be served as a main meal or side dish.
Ingredients You'll Need

Chicken: You need cooked chicken breast to make this salad. You can cook it or use store bought roasted chicken.
Potatoes: I like to use red potatoes for this recipe, but feel free to use russet potatoes if you prefer.
Apple: I like using organic apples.
Onion: I like using yellow onions, but red onions will also work.
Peas and Carrots: I like using frozen peas and carrots, but you can use fresh vegetables.
Cilantro: Replace it with parsley if you prefer.
Dressing: I use a mixture of mayonnaise, sour cream, limes salt and pepper to make my dressing, but you can replace it with greek yogurt if you prefer.
How to Make Potato and Chicken Salad
Mix all of the ingredients together and place in the refrigerator until ready to serve.

- 4 large potatoes peeled, cooked and diced
- 1 cup of diced carrots cooked
- 1 cup of peas cooked
- 1 large chicken breast cooked and shredded

- Lime juice from 2 limes
- ½ cup mayonnaise
- ½ cup of sour cream or plain yogurt
