    Spinach Salad with Cilantro-Lime Vinaigrette

    Spinach Salad with Cilantro-Lime Vinaigrette

    Ingredients
     

    • 4 cups pre-washed spinach
    • 1 cup chopped cucumber
    • 4 radishes thinly sliced
    • ⅓ cup chopped red onion
    • 1 cup chopped tomato
    • 2 cup shredded carrots
    • Juice of 2 limes
    • ¼ teaspoon ground cumin
    • 2 tablespoon white vinegar
    • ¾ cup olive oil
    • ¾ cup chopped cilantro
    • Salt and pepper
    • 1 cup crumbled feta cheese

    Instructions
     

    • In a blender, combine the lime juice, ground cumin, white vinegar, olive oil, cilantro, salt and pepper. Blend until smooth.
    • To serve, place spinach in a large platter. Top with cucumber, radishes, onion,tomato, carrots and feta cheese.
    • Drizzle dressing over the salad and season with salt and pepper.

      So healthy and wonderful for summer. we generally eat spinach cooked here, but I love it raw and add often it into green salads. I sometimes make a sandwich from spinach leaves and cheese. I love all these veggies together in this salad.

      Oh Erica this is right up my alley!!! i absolutely love cilantro (I could stick my face in a bunch and just inhale all day long). the only thing is, im not fond of feta, so I'd have to use Ranchero Queso Fresco. I'm going to give this a try next week for my weekly salad night dinner. thank you 🙂
