    Ingredients
     

    • 5 large eggs white and yolks separated
    • 1 ½ cups of granulated sugar
    • ½ cup orange juice
    • ½ teaspoon vanilla extract
    • 1 ½ cups flour sifted
    • 1 ½ cups cornstarch or maizena sifted
    • 2 teaspoons of baking powder
    • 2 tablespoons of butter melted

    Instructions
     

    • Preheat the oven to 350 degrees Fahrenheit. Line an 8-inch circular cake pan with parchment paper, or grease the cake pan with butter, then lightly coat the pan with flour.
    • Add half of the sugar to the egg whites, and beat the egg whites until they are stiff and glossy.
    • In a medium bowl whisk the egg yolks with the remaining sugar until thick and pale yellow.Add the orange juice and vanilla.Whisk to mix. Add the sifted flour and cornstarch and whisk until smooth.
    • Add ⅓ of the egg whites into the batter and gently mix it in to the egg yolk mixture. Add the second third of the egg whites and fold until no egg whites remain. Repeat with the last addition of egg whites.Pour in the melted butter and fold to incorporate.
    • Pour the cake batter into the prepared cake pan andbake the for 25 to 30 minutes. Insert a thin skewer or toothpick into the centers. If it comes out dry, the cake is done. Let the cake cool completely on a wire rack. Run a knife around the inside of the pan to loosen the cake, and remove.

    Bizcochuelo (Colombian Sponge Cake)Pin

    Bizcochuelo is a simple cake made with flour, sugar and eggs and has a light, spongy texture. Sometimes this cake is served plain with coffee, or it's filled with fresh fruit jams, but it's typically used as a base for other traditional Colombian desserts such a Torta de Pastores and Torta de Coco.

      Love it. It's almost like the sponge cake I make but without the butter and orange juice. Shall try it next time I make a sponge cake.

      This was the easiest recipe EVER!!! Delicious from start to finish! Served it with whipped cream and strawberries (soaked in a little sugar for 20 minutes.

      Was my copy of your recipe incorrect? It calls for stirring together 3 cups of flour (incuding 1 1/2 cups cornstarch) with 1/2 cup orange juice. Was I supposed to add 1 1/2? That would work. When I added the extra cup of liquid the recipe worked.

      Would this be the same as the cakes they sell in Sladana Tolima? It has been 40 years since I had bizcochuelo and they were best in this town.
