    Saffron (Azafran)

    It is known as the most expensive spice in the world, but a little pinch goes a long way. I love the taste and color that Safron gives to food. It has a delicious honey-flower flavor. Spain and India are known to be the biggest producers of this spice.

    It is a key ingredient in the world famous Spanish dish, Paella, which  is one of my favorite dishes.

      I have never used saffron but I use quite a lot of tumeric which gives the same yellow effect. Love all the dishes especially the salmon with saffron sauce.

      I remember Nupur from One Hot Stove telling me that her mother keeps the saffron locked up with the silver! It's that valuable! At my hometown international grocery, it's kept behind the counter, not on the shelves. It's that valuable!

      I treasure my tiny container of saffron! I'm very stingy with it. The color is magnicicent, isn't it? I'd love to try your saffron garlic mashed potatoes....looks divine, Erica.

      I love saffron, especially with seafood. I never thought to add it to mashed potatoes. Will be trying that next! Thanks!

      Now, you are a girl who knows how to use saffron. Although, I really appreciate saffron, I have never really used it in my cooking. I am obviously missing something here. Your dishes look amazing.

      I have some saffron just waiting to be used in something other than rice. I am really into yuca now (thanks to you and I will let you know when I post my yuca fries, I am giving you full credit) Now I am going to give the saffron mashed yuca a try.

      I just bought a bag of saffron at the Mexican market VERY cheap, so I am going to start cooking a lot with it. I might start with those mashed potatoes, they look delicious, well everything looks delicious, but they also look simple. hehe
