So nice, have seen carrots with orange, but never like this. Lovely.
Now I know what else I’m serving with the chicken breast I’m making tonight!
I love carrots and I bet the lime juice really brightens the flavor. Very nice!

Thank you everyone for visiting my blog!
Carrots and lime, I wouldn’t have paired those two in my mind but now that I’ve seen it, it makes sense to me. Love that dish, so cute!
Coincidentally, I was thinking I hadn’t made a side dish spotlighting carrots in a long time so on Monday I made something similar to your carrots only using honey, ground coriander seeds and a dash of cumin instead. I really like the acid from the lime here though and will definitely try this soon.
Those are some gorgeous carrots Erica. I am a huge cooked carrot fan.
What a beautiful sparkly thing to do with carrots! Yum Erica!
I don’t eat carrots very often…they are not one of my favorites, but these look delicious.

Interesting to see carrots served with lime and not orange. I love it. Also, your herbs and spices are a great addition. Carrots are so good for us….it’s wonderful to see new and different ways to eat them. Thanks, Erica!

Your carrots look amazing. I love citrus on basically everything.
This dish sounds like it is as full of flavor as color. What a great idea!
Carrot and mint! Genius! I am always trying to think of things to do with carrots and ya know what I end up doing with them? Nothing. I skin them and eat them raw. Or I don’t even buy them. But this seems so simple and I even have the ingredients! Delicious, delightful, fantastico!
