Fresh Green Salad with Lime-Lemon Dressing

This green salad is simple and quick to prepare. Save the recipe for the hot  summer days ahead when you don’t want to touch the stove :) You’ll thank me for it later!

The recipe here is only a guideline. I am sure you don’t  need a recipe. The key is to use fresh ingredients.

Enjoy!

Ingredients

Asparagus, cooked and cut into pieces
Avocados, cut into pieces
Cucumber, diced
Spinach

Dressing
Juice of 1 Lime
Juice of 1 lemon
1 tablespoon olive oil
Salt and pepper
1/4 cup white vinegar
1/4 teaspoon sugar
2 tablespoon fresh cilantro (optional)

To serve:

Place all the ingredients on a platter and drizzle on the dressing before serving.

I’m loving all the “greens” in your salad, Erica! And green even to the dressing! I’ve used limes in my vinaigrettes, but only because I ran out of lemons! And I love the lime taste, too. Will try to run out of lemons more often!

i do the same things…but the white vinegar seems to add that ‘ extra’ ness to this lovely stuff :)

Great salad and the dressing is just perfect. I use lemon and lime instead of vinegar most of the time…the freshness of the citrus…..Delicioso!

Taste of Beirut- I used 1 tablespoon of oil, but you can add more if you prefer!

I love the photo, such vibrant color. And the viniagrette! I usually make the standard lemony dijon base with varying herbs to switch it up. Now I have a completely new version to try. Thanks again for your innovative recipes.
