    These cheese and guava popsicles (paletas de queso con bocadillo) are easy to make rich, creamy, sweet and delicious. This recipe will become your favorite summer dessert!

    What are Paletas?

    They are also known as helados Ann they are the Latin version of popsicles. Paletas are a wonderful summer treat.

    They are made from different fruits and ingredients depending on the country and family. In Colombian you will find street vendors selling different flavor paletas all over towns and cities.

    About this Cheese and Guava Popsicles

    If you grew up in Colombia like me, I am sure that you ate Paletas de Queso con Bocadillo. The combination of guava and cheese is very popular in the country and we have many recipes using it.

    The traditional Paletas de Queso con Bocadillo are usually made with grated Colombian cheese, but I decided to use cream cheese instead for a creamier texture inspired by the famous cheesecake.

    Ingredients You'll Need

    Guava Paste: Known as bocadillo is a paste made with guavas and sugar. You can find it at local Latin markets or online.

    Sweet Condensed Milk: I love the flavor and texture of sweet condensed milk and make these popsicles sweet.

    Evaporated Milk:I like to use evaporated milk, because is less watery than regular milk, but feel free to replace it for whole milk if you prefer.

    Heavy Cream: This is a wonderful ingredient for creamy and rich popsicles.

    Cream Cheese: I like to use regular cream cheese to make this recipe, but if you want to make them the traditional way, replace it with shredded white cheese.

    How to Make this Recipe?

    1. Mix the heavy cream, sweet condensed milk, cream cheese and evaporated milk in a blender.
    2. Place some pieces guava paste inside the popsicles molds and add some of the milk mixture on top.
    3. If your popsicle mold has slots for sticks, you can insert them before freezing, if not, place the popsicles in the freezer for 1 hour, then put wooden popsicle sticks in the middle. Keep them in the freezer for 7 hours more or overnight.
    4. To serve, run the popsicle molds under warm water to easily remove the frozen popsicles.

    Notes

    The amount of popsicles depends on your molds, but you can make between 6 and 8 with this recipe.

    You can keep these popsicles in the fridge for about 30 days, just wrap them well with plastic.

    Ingredients
     

    • 1 cup heavy cream
