Perfect baked salmon with cilantro-garlic oil. This is a simple and delicious dish, a wonderful lunch or dinner meal.

The combined simplicity and flavor are what make this baked salmon with cilantro-garlic oil dish terrific. I think that we all need some easy, but delicious recipes that we can prepare in a short time and with little planning, for a weeknight dinner party, without sacrificing taste.
I love to cook salmon because just by adding olive oil, salt and pepper, it tastes great and adding just a couple of more ingredients makes for a great tasting, fancier dish.

Ingredients You'll Need
The printable recipe card with exact amounts and cooking directions to make this baked salmon is below.
Salmon: I love salmon, because it has a lot of flavor, but you can also use cod, halibut or your favorite fish to make this dish.
Cilantro: I recommend using fresh cilantro to make this recipe, but feel free to replace with parsley or basil if you don't like it.
Oil: I like to use olive oil, but avocado or coconut oil are delicious options.
Garlic: I prefer to use fresh garlic for the best flavor.
Lime: fresh lime juice adds a wonderful freshness to this baked salmon recipe.
Salt and Pepper: Seasoning is important to make this recipe.

Of course this recipe would work beautifully with parsley instead of cilantro, in case you are one of those people who hate cilantro and think it tastes like soap 🙂 I happen to love the taste of cilantro and I don’t think that you will find many Colombians that don’t like it as we use cilantro in almost all of our traditional dishes. My mom is a huge fan of cilantro and uses it as a garnish in every soup she makes.
What to Serve with this Baked Salmon
This salmon recipe goes well with a lot of side dishes. Some of my favorite are patacones (fried green plantains), avocado and tomato salad and roasted yuca.

Hi,
This recipe looks great, but it seems as though the instructions are incomplete. It says to put half of the sauce mixture on the fish, but then it never explains what to do with the other half.
Thanks,
David

I admit I am not fond of cilantro. I have some dill growing in the backyard, though. I think that will work well.
