Sancocho is a comforting, hearty and filling soup popular in Colombia and other South American countries.

Sancochos were served every weekend in my house when I was growing up…and I hated eating soup!
Colombia is a country that is big on soups, at least that’s how it was in my house. After many battles with my mom, I fell in love with soups and here I am sharing these delicious Colombian sancochos recipes with you. I think my parents would be very proud of me for eating my soup 🙂
This dish is also popular during the holidays especially on December 25th and January 1st. You can see people making sancocho over open flame in the streets, next to the rivers or in their kitchens. I love serving this soup with avocado and white rice on the side.
What is Sancocho Made of?
Sancochos are made with a combinations of protein, potatoes, yuca, plantain, corn, onions, peppers, other vegetables, herbs and spices. like many traditional recipes every cook and country has its own version. In Colombia we have different sancochos depending on the region.
