Was at the Caribana festival (1 of the many events) in Toronto 2 nights ago to do some media coverage and to assist my sister with a food stall she had. The stall next to her’s were run by some (not sure if there’s a right word to use, but they were of Latin origin). They ended up teaching me something similar. they were peeling ripe plantins and cooking them in hot oil (deep fry). The most amazing thing ever. Yep.. they shared some with me.
I’ll try your banana suggestion soon.

can you use panela instead of the brown sugar? If so, do you first melt it down beforehand? Sounds like a really good recipe!
@Chris de La Rosa:
Plantains are soo good! But aren’t they more of a potato than a banana? An African recipe I was taught was to take plantains and put them into a frying pan with lots of vegetable oil and onions, adding garlic to it near the end. (you can add chili powder to make it taste more spicy) but this one tastes sweet!

Rebecca- My grandmother made them with panela. I made this recipe with brown sugar, because in the USA is easier to find it.
