I made a guacamole recipe when I started this blog and I loved it, but this week I made a different version for my husband and he thought it was delicious. It had the perfect amount heat. Enjoy!
Ingredients
2 ripe avocados
1/3 cup finely chopped white onions
Juice of 1 lime
½ cup chopped fresh cilantro
1 small jalapeño pepper, deseeded and finely chopped
1 small ripe tomato, chopped
Salt and pepper
Directions
- Cut each avocado in half, working around the pit. Twist apart, and remove the pit with a knife. Peel off the skin and toss in a bowl. Add the lime juice to prevent from browning, mash the avocados.
- Add the onion, jalapeño pepper, tomato, cilantro, pepper and salt.
- To serve as a dip, transfer to a serving dish, garnish with cilantro and serve with tortilla chips.

I love guacamole! Those are the same ingredients I use for mine too, only a slightly different method. Looks fantastic! Which reminds me, I have a ton of avocados that I need to use up.

Hi Erica. This is basically my recipe as well, except I always add about 1/2 tsp of cumin to meld the flavors even more. Then to make sure you always open the batch to a bright green instead of black, make sure to put Saran wrap directly over the guacomole and pressing against it then cover it. This guarantees fresh green all the time.

Sigh…. Nothing makes a good dish better than a good guacamole. =) My problem is I wind up eating half of the avocado before I can mash it LOL.
Another easy Avocado recipe, Take the avocado and core and clean like Erica says, then cut it in to trangular wedges lengthwise, so you’ll have 6-7 inch long strips of the avocado, then drizzle some lime juice over it and shake some salt over it. It works better if the avocado is already cold. I could eat avocado like that all day, if it wasn’t nearly $2 per avocado I would probably eat it all day.
