Ensalada de Salmón y Aguacate (Salmon and Avocado Salad)

Hot summer days make me tired and cranky, so I try to keep things simple in the kitchen. So on those days when you’re too tired to cook something fancy, this salad makes a wonderful and satisfying lunch or dinner for the whole family. You can serve it as a side dish or as your main course.

Ingredients

  • 2 servings
  • 2 cups arugula
  • 1 cup tomatoes, diced
  • 1 avocado, peeled and diced
  • 1 cup cooked salmon, diced
  • Dressing

  • 1/4 cup lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons white vinegar
  • 1 tablespoon of sugar
  • Salt and pepper

Directions

  1. To make the dressing, in a small bowl, whisk together all the ingredients.
  2. Place all the salad ingredients in a salad bowl or stack the ingredients as in the picture, and then add the dressing.
