Hot summer days make me tired and cranky, so I try to keep things simple in the kitchen. So on those days when you’re too tired to cook something fancy, this salad makes a wonderful and satisfying lunch or dinner for the whole family. You can serve it as a side dish or as your main course.

Ingredients:
2 servings
2 cups arugula
1 cup tomatoes, diced
1 avocado, peeled and diced
1 cup cooked salmon, diced
Dressing:
1/4 cup lemon juice
1 garlic clove, minced
2 tablespoons white vinegar
1 tablespoon of sugar
Salt and pepper
Directions
- To make the dressing, in a small bowl, whisk together all the ingredients.
- Place all the salad ingredients in a salad bowl or stack the ingredients as in the picture, and then add the dressing.
