Pasta with Sausage and Vegetables

Hi lovely My Colombian Recipe readers, its such a joy to guest for the sweet and talented Erica who loves making us all feel so hungry

Here is a tasty and very simple pasta dish with Italian sausages and veggies:

Ingredients:

* one pack of Italian sausages
* 1/2 a red onion chopped
* 1/2 cup fresh basil
* 1/2 a pack of spinach
* 4 cloves of garlic chopped
* some frozen peas
* 4 small chopped tomatoes
* one cup of any desired pasta
* 2 tablespoon of Italian herbs
* one small chopped zucchini

Method:

1. simple saute the onion, garlic in olive oil add the chopped sausage for 10 minutes
2. then add the spinach, basil, peas and zucchini with tomatoes and simmer for 20-30 minutes
3. serve over al dente pasta and enjoy

Italian Sausage is a weakness of mine since I moved to Jerz, and this is exactly the way I would want it cooked. I love peas! Great dish and she is a sweetie, but so are you Erica!
