This dip may not sound like anything particularly exciting to make, and it certainly is simple. But a great homemade dip recipe is always welcomed on my list of snacks.
This White Bean and Cilantro dip is delicious with tortilla chips, of course, but also with fresh vegetables, pita bread or spread on crostini.
If you are one of those people who hates cilantro….I guess you are not going to like my dip
Buen Provecho!
Ingredients
1 (15 oz) can white beans
1 garlic clove
3/4 cup fresh cilantro
Juice of 1 lime
1/2 teaspoon ground cumin
1 scallion
1/4 cup olive oil
Salt and pepper
Directions
1. Place all the ingredients in the food processor except the olive oil. With the food processor running, add the olive oil, until the mixture is smooth and spreadable. Adjust seasoning with salt and pepper to taste.
2. Transfer to a serving bowl.

on the contrary, i think it sounds wonderfully exciting! cilantro is my favorite herb, and next to garbanzo beans (i adore hummus), the white bean is my favorite dip-maker. excellent!
