White Bean and Cilantro Dip

This dip may not sound like anything particularly exciting to make, and it certainly is simple. But a great homemade dip recipe is always welcomed on my list of snacks.

This White Bean and Cilantro dip is delicious with tortilla chips, of course, but also with fresh vegetables, pita bread or spread on crostini.

If you are one of those people who hates cilantro….I guess you are not going to like my dip :(

Buen Provecho!

Ingredients

1 (15 oz) can white beans
1 garlic clove
3/4 cup fresh cilantro
Juice of 1 lime
1/2 teaspoon ground cumin
1 scallion
1/4 cup olive oil
Salt and pepper

Directions

1. Place all the ingredients in the food processor except the olive oil. With the food processor running, add the olive oil, until the mixture is smooth and spreadable. Adjust seasoning with salt and pepper to taste.

2. Transfer to a serving bowl.

hi…I keep an eye on you here though I don’t leave comments anymore…I haven’t been posting on my blog…but I had to show you I did the same thing last year.

I called it white bean hummus…

it was sooo good…

I like the cumin…will try that next time.

on the contrary, i think it sounds wonderfully exciting! cilantro is my favorite herb, and next to garbanzo beans (i adore hummus), the white bean is my favorite dip-maker. excellent!

A beautiful bean dip is always exciting to me! I could definitely eat my fair share of this dip. In fact, I’ve been known to make a lunch out of bean dip before – LOL!

Eric,

I’d been eyeballing this recipe for a while and finally got around to making it last night. Hummus, move over. You are so sharing my love with this fantastic spread now.

It is AWESOME! Thank you so, so much. I am a devoted fan of health dips and shmears and you knocked it out of the ballpark with this!
