Salmon con Pesto Or Salmon with Pesto Sauce

Salmon is one of my favorite fish and I am always looking for different ways to prepare it. This Salmon with Pesto Sauce recipe is very easy to make and the arugula pesto adds a great touch to the fish. This is one of those dishes that you can make very quickly for last minute entertaining. I happen to have some arugula left over from a salad I made this week so I made an arugula pesto but you can also use your favorite pesto.



(Serves 4)


  • 1 ½ pound salmon fillet, cut into 4 pieces
  • 1 lime, cut into thick slices
  • 1 cup water
  • Salt and pepper
  • Arugula Pesto

  • 2 cups arugula
  • 1 garlic clove
  • 1/3 cup pine nuts
  • ½ cup olive oil
  • 1/3 cup parmesan cheese
  • Salt and pepper


  1. Fish:
  2. Place the water in a large saucepan, add the lime and bring to a boil. Add the salmon fillets.
  3. Reduce the heat to low and simmer covered for 10 to 15 minutes. Remove from the heat and using a slotted spoon, transfer the fish to a plate lined with paper towels.
  4. Arugula Pesto:
  5. Place the arugula, pine nuts, garlic and olive oil in a food processor and process until a smooth paste is formed.
  6. Add the parmesan cheese, salt and pepper and process for about 20 seconds.
  7. To serve place the salmon in a serving plate, season with salt and pepper and spoon the pesto over the top.
