    This Chicken with Honey and Lime (Pollo al Limón y Miel) is a delicious way of cooking chicken as the lime juice gives it an extra kick. The chicken breast remains moist, while the skin remains crispy and flavorful.

    This flavorful chicken is perfect for feeding a crowd, because you can double or triple the recipe as needed. You can make this dish using a whole chicken, chicken breast, legs or thighs.

    Ingredients You'll Need

    Chicken: I like to use bone in chicken breast for this recipe, but feel free to use chicken legs or thighs.

    Honey: It gives a wonderful sweet flavor and balances the lime well.

    Mustard: I like to use dijon, but you can use regular mustard.

    Oil: I recommend using olive oil, but butter also works well.

    Lime: Fresh lime juice helps to keep the chicken moist and it gives amazing flavor.

    Salt and Pepper: To season the chicken.

    How to Make Chicken with Honey and Lime?

    • Marinate chicken: Mince and mash garlic to a paste with ½ teaspoon salt, then transfer to a large bowl. Stir in olive oil, lime juice and cumin. Toss chicken within marinade until coated. Cover, put in the fridge and marinate for at least 1 hour.
    • Position a rack in the center of the oven and heat at 425°F.
    • Place the chicken on a baking sheet and roast for about 15 minutes. Take the baking sheet out the oven and place the lime slices on top of the chicken evenly.
    • Continue roasting until the chicken is cooked through, about 40 minutes more and serve.

    Some of my favorite sides dishes to served with this chicken dish are rice with hearts of palm, beets and carrot salad, arugula orzo salad, salted potatoes and avocado and tomato salad.

    This roasted chicken with lime and honey is moist with a crispy and full of flavor skin. I love the combination of lime and honey with chicken, it's absolutely delicious!

    Ingredients
     

    • 2 chicken breasts bone in, skin on
    • 2 tablespoons olive oil
    • Salt
    • Fresh ground pepper
    • ½ cup honey
    • 4 tablespoons lime juice
    • 1 tablespoon Dijon mustard

    Instructions
     

    • Preheat the oven to 350° F.
    • Rub the chicken breast with olive oil and sprinkle generously with salt and pepper.
    • Place the chicken skin side down in a baking dish and cook for 30 minutes. When the chicken is cooking, in a small bowl mix the honey, lime juice, mustard, salt and pepper.
    • Pour the honey mixture over the chicken breasts and continue cooking for another 10 to 15 minutes or until tender and the juices run clear when a skewer is inserted into the thickest part of the meat.
    • Remove the chicken to a serving platter and let it stand for 5 minutes then serve.
