This Avocado and tomato Salad is a simple, quick and delicious recipe and is one of my favorite salads, especially during the summer months, when you find beautiful tomatoes at local farm markets.
This Avocado and Tomato Salad is light and perfect to serve as a side with meat, poultry or seafood. Or just add it on top of lettuce or shredded cabbage and sprinkle nuts on top for a satisfying meatless lunch.
I really love the mix of colors, textures and flavors. The creaminess of the avocado, the crispiness of the cucumber and red onion complement the fresh tomatoes.
Ingredients You'll Need to Make Avocado and Tomato Salad

Avocado: Use ripe avocados for this salad.
Tomatoes: You can use your favorite tomatoes, I like to use organic medium tomatoes.
Cucumber:i like to use English cucumbers, but feel free to use your favorite.
Onions: I prefer the taste and texture of red onion for this salad, but replace it with white or yellow if you prefer.
Dressing: Olive oil, white vinegar, limes, cilantro, salt and pepper.
How to Make this Salad
- In a small bowl, whisk the vinegar, olive oil, salt, pepper, lime juice and cilantro, then set aside
- Place half of the tomatoes slices in a large plate, top the tomatoes with half of the cucumber slices, half of the onions and half of the avocado pieces and repeat to make another layer on top. Drizzle with dressing and serve.
Notes
You can serve this salad as side dish with my beef skewers or steak with chimichurri.
Feel free to use parsley instead of cilantro and lemon juice instead or limes.
