I was in the mood for soup, so I made this Crema de Brócoli or broccoli and cheese soup for lunch yesterday. Not what I would call a traditional weekend lunch in my house, but it was delicious. It is also simple and easy to make. I hope you enjoy it too.

Broccoli Soup (Crema de Brocoli)



(4 servings)

  • 2 tablespoon of butter
  • ½ cup diced onion
  • 1 pound broccoli florets
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper
  • ¼ teaspoon ground cumin
  • ¼ teaspoon paprika
  • 1 cup of shredded cheddar cheese

Sopa de Brocoli or Broccoli Soup


  1. In a medium pot over medium-high heat add the olive oil and onion. Cook for 5 minutes, stirring often. Add the broccoli florets and cook for about 2 minutes.
  2. Add the broth, cream, cumin, paprika, salt and pepper. Bring to a boil, and then reduce the heat to low and let it simmer for about 12 to 15 minutes.
  3. Transfer the soup to a blender and blend until smooth. Transfer back to the pot and add the cheese. Stir to combine and cook for about 5 more minutes. Adjust the seasoning and serve warm.

    Mmm! This is an old favourite of mine that I haven’t had in a really long time. Maybe it’s because I can’t find cheddar around here. I think Gruyère might be a good substitute.

    my husband loves broccoli however it is presented, in soups, steamed or curried…yummmmm, your broccoli soup looks warm and delicious, one of my favourite comfort foods!
