About this Avocado Vinaigrette
This simple Avocado Vinaigrette or Vinagreta de Aguacate is popular all over Colombia. It's creamy, tangy and with a delicious avocado flavor. It makes even a plain bowl of greens flavorful.

Ingredients You'll Need

Olive Oil: Always use a good quality oil to make your dressings, because it makes a big difference.
Limes: I recommend using fresh lime juice to make this vinaigrette recipe.
Avocados: Use ripe avocados, but not mushy.
Vinegar: You need white vinegar.
Salt and Pepper: For extra flavor.
Herbs: I like to use a mixture of fresh parsley and cilantro, but feel free to use just one of them if you prefer.

How to Make Avocado Vinaigrette Dressing
- Cut each avocado in half, working around the pit. Twist apart and remove the pit with a knife. Peel off the skin and discard.
- Put the avocado in a blender, add the remaining ingredients and blend until smooth and well mixed then season with salt and fresh ground pepper.

How to Serve this Vinaigrette?
Serve with your favorite lettuce, egg or potato salad, but this is a lot more than a salad dressing. It works as a dip for raw veggies or chips, it would be great in a sandwich, and with grilled seafood and steamed vegetables.
