Salmon is one of my favorite fish to cook and eat. Not only does it cook very quickly, about 15 minutes, but I find Salmon to be one of the most versatile proteins in the kitchen with which to work. It's delicious, healthy and very easy to prepare.
You can use your favorite fish with any of these recipes if you don't like salmon. Some of my favorite side dishes to serve with fish are salted potatoes (papa salada),arroz con coco y lentejas (coconut and lentils rice), cilantro rice and patacones (fried green plantains)

All your Salmon recipes use a dry heat so that the outside is seared. We like ours moist and prefer to poach in either white wine or milk to which various herbs and spices have been added.
